AbstractFood premises selling sashimi and sushi have proliferated years before 1996. This has not only made this type of food more popular and affordable, it also increased the potential for such 'high risk food' to be prepared and stored wrongly. To counter this problem, the Urban and Regional Councils are planning to bring in legal controls over these foods and the guidelines for the safety and hygiene of sashimi and sushi are listed.
