AbstractLi Shanlin is beaming. The 75-year-old Beijing chef is standing in the heart of a vast, gleaming kitchen in Hong Kong's five-star Mandarin Oriental hotel. "This is great," he says, looking around at the rows of burners and work spaces. "At my restaurant, even the toilet often breaks down." But Li is not intimidated. As with all great artists, his skills transcend his surroundings.
