Abstract | Chan Yu-choi is the sous chef with the Island Shangri-La's Lobster Bar in Hong Kong. Prior to joining the Island Shangri-La in 1992, Chef Chan was a senior cook at the Plume restaurant in the Regent Hotel. While he was there he won a Gold Award with Distinction at the Hong Kong Tourist Association's Culinary Awards in 1989. |
