AbstractWhile the proportion of household spending on dining out has changed little from 1991 to 1995, the preferred choice of eating places has shifted from Chinese restaurants to fast food shops. This shift was mainly driven by price considerations. Chinese restaurants have been under greater pressure to raise prices than other types of restuarants due to their large overheads. Fast food chains are also able to offer a more varied menu and convenience of location. The change in the eating habit has led to declining business sales, a contraction in the number of traditional Chinese restaurants and rising unemployment among Chinese restaurant workers. Detailed explanation and analysis are given in this article.
